Strawberries and Cream

I can honestly say this is summer in a glass. This sweet, fruity drink is rich in fibre, vitamin C and flavonoids from the berries, and the milk makes it much lower in fat than a cream-based cocktail.


Serves 4

400g (14oz) strawberries, hulled

400ml (just over 13fl oz) semi-skimmed milk or non-dairy milk

2–4 tbsp xylitol (or caster sugar) to taste


1 Blend the strawberries and milk together until smooth. Taste and add xylitol if it’s not sweet enough.

2 Pour into short glasses and serve.
