
This is a refreshing, sweet taste of summer, which can be adapted to make it non-alcoholic for drivers or those trying to be good. The peaches add vitamin CWhat it does: Strengthens immune system – fights infections. Makes collagen, keeping bones, skin and joints firm and strong. Antioxidant, detoxifying pollutants and protecting against…, B vitamins and betacarotene, which help to protect the liver and go some way to compensating for the alcohol load!
Ingredients
Serves 4
2 large ripe peaches
2 heaped tbsp raspberries
1 bottle chilled Champagne or non-alcoholic, sparkling grape juice
Directions
1 Chill the glasses.
2 Pureé the peaches until completely smooth. If necessary, you can do this in advance and chill the pureé. Press the raspberries through a fine sieve to extract the pulp without the seeds. Again, you can do this in advance and put the pulp in the fridge.
3 Place a couple of tablespoons of the peach purée and a teaspoon of raspberry purée into each glass and slowly top up with wine or juice, stirring as you pour. You should aim to have one-third fruit purée to two-thirds fizz.
