- Put the onion in a bowl and ad the garlic, if using.
- Remove the avocado pit and scoop out the flesh using a tablespoon. Add it to the bowl and squeeze over a little lime juice to stop it from going brown. Mash using fork.
- Add the apple cider vinegar and coriander, and mix to your preferred consistency. If you prefer a smoother guacamole, use a hand blender. Serve with kimchi and kale crackers.
- Tip: Crushed fresh garlic can be used, but roasted will give it a milder, sweeter flavour.
Mash all the ingredients together and adjust the seasoning to taste.
