Quarter small red onion, very finely chopped

Half small avocado

Lime juice, to taste

1tsp apple cider vinegar

1tsp very finely chopped coriander

1 small roasted garlic clove (optional) (see tip)

100g kimchi and 3 Kale crackers to serve (separate recipe)


  1. Put the onion in a bowl and ad the garlic, if using.
  2. Remove the avocado pit and scoop out the flesh using a tablespoon. Add it to the bowl and squeeze over a little lime juice to stop it from going brown. Mash using fork.
  3. Add the apple cider vinegar and coriander, and mix to your preferred consistency. If you prefer a smoother guacamole, use a hand blender. Serve with kimchi and kale crackers.
  4. Tip: Crushed fresh garlic can be used, but roasted will give it a milder, sweeter flavour.

Mash all the ingredients together and adjust the seasoning to taste.
