Chunky Fresh Healthy Greek Salad With Pitta Bread, Black Olives, Feta Cheese, Red Onions and Mint

This is the perfect summer starter. Simply choose any or all of the following antipasti ideas and let people serve themselves. If you don’t have the time or inclination to make your own hummus or guacamole, you can buy them from the supermarket or deli, but go for good quality versions that are free from artificial preservatives and flavours. The bright colours of the vegetables show their phytonutrient and antioxidant content, which will help keep your guests healthy, but there is also plenty of fibre in the vegetables, chickpeas and whole grains to aid digestion. To turn this into a main meal, you could serve it with the Cashew and Herb Corn Bread.
