Wild Rice, Artichoke and Aduki Bean Salad

These small, russet-coloured beans are good source of B vitamins to help methylation, as well as being rich in minerals. Wild rice is not in fact a rice but a grass and is high in protein, making it lower GL than ordinary rice. It takes much longer to cook, but look out for the quick-cook variety.
