You might like to add some lightly wilted spinach to increase your green leafy veg quota. Perhaps have a boiled egg, or some yoghurt or a handful of nuts or pumpkin seeds in addition to this dish to complete your breakfast, to boost the protein content. This recipe serves two, as wild mushrooms are normally an occasional treat when you can get hold of them, so it makes a nice weekend breakfast or brunch to share. However, if you are just treating yourself, simply halve the quantities.
