Spiced Flapjacks

The mixed spice and mixed dried fruit give these sticky flapjacks a festive flavour. I use agave syrup in preference to golden syrup as it has a naturally low GL, which makes for fewer blood sugar upsets. I also add almonds, not only for flavour, but to contribute protein and minerals like calcium and magnesium as well.

Ingredients

Makes 10

75g (3oz) slightly salted butter

1 tbsp agave syrup (or golden syrup)

75g (3oz) mixed dried fruit

100g (4oz) whole rolled oats

50g (2oz) ground almonds

4 tsp mixed spice

Directions

1 Preheat the oven to 170°C/325°F/gas mark 3. Line a baking tray with baking paper.

2 Melt the butter and syrup together gently, taking care not to let them boil. Stir in the mixed dried fruit, oats, almonds and mixed spice.

3 Shape the mixture into ten walnut-sized balls and place on the baking tray. Bake for around 20 minutes or until just turning golden on top.

4 Leave to harden and cool on a wire rack
