GO GAZPACHO

Recent research shows that this simple soup, served hot or cold, made with tomato, cucumber, peppers, garlic, olive oil lowers your blood pressure.

Here’s my recipe from the Low GL Diet Bible. It stores well in the fridge for up to a week.

3 peppers (red, yellow and orange are the sweetest), chopped 1 cucumber, chopped 1 red onion, chopped 3 celery sticks, chopped 400g (14oz) can chopped tomatoes 425ml (. pint) tomato juice 2 garlic cloves, crushed ó jar of Peppadew sweet baby peppers, drained and chopped Solo sea salt and ground black pepper

1 Put half the fresh vegetables in a food processor with the tomatoes, tomato juice and garlic, and process until smooth.
2 Add the remaining veg Serves 6 Wishing you a Happy and a Healthy New Year.
